That address matters. It plants a nationally recognized name directly on the Old Town stretch, a few doors from the Leonis Adobe and the Saturday farmers market crowd, rather than tucking it into a shopping-center pad. The knock-on effect worth watching is parking pressure on weekend nights. Old Town's lots were built for a slower era of the strip. The chain has four existing locations, one in Lake Balboa and three in North Hollywood, and focuses on the flavors of Jerez, Zacatecas.

The relevance for a Calabasas resident is not the cuisine. It is the location. Las Virgenes north of the freeway has been a stretch of banks, medical offices, and a Ralphs for so long that most residents don't think of it as a dining corridor at all.
